Will the printing match the proof?

Yes, and no. If you're printing on an uncoated stock, it will be hard to simulate the loss of brilliance with a proof. If you're printing on a coated stock, the 4-color process parts will be accurate. Pantone matches may vary. Go to related topic

I'm printing on a matte coated stock. Why does it look different from the proof?

Matte coated stocks are not as reflective as gloss stocks. They're also less reflective than dull or satin stocks. A cross-section of matte stock would reveal more air pockets and a rougher surface that refracts (absorbs) more light than it reflects.

What's with the viewing booth light?

The viewing booth light gives us all a chance to view a proof under the same lighting conditions. Monitors, incandescent lights, and fluorescent lights all vary widely. To be able to evaluate color accurately we use lights that are consistently 5000 degrees Kelvin. The tendency of color to change with the light source under which it is viewed is known as metamerism. For example, two reds may appear to match under fluorescent light, but clash badly in sunlight. There's a great case for the viewing booth light.
